Description

Discover the simplest way to enjoy a classic Italian dessert with this surprisingly easy 1-ingredient vanilla ice cream tartufo recipe.


Ingredients

Ice Cream Center:

  • 1 pint vanilla ice cream
  • 1 pint chocolate ice cream
  • 4 maraschino cherries, soaked in 1/4 cup Amaretto liqueur

Chocolate Ganache Coating:

  • 8 oz dark chocolate, finely chopped
  • 1/2 cup heavy cream

Instructions

 

  1. Prepare the Cherry Center: Soak the cherries in Amaretto for at least 30 minutes.
  2. Form the Vanilla Core: Scoop out a small ball of vanilla ice cream, place a soaked cherry in the center, and cover it with more vanilla ice cream. Shape it into a ball and freeze for 1 hour.
  3. Add the Chocolate Layer: Take the vanilla ice cream ball and coat it with a layer of chocolate ice cream. Shape it into a smooth ball and freeze for 2 more hours.
  4. Make the Ganache: Heat the heavy cream in a small saucepan until it just starts to simmer. Remove from heat and pour it over the chopped dark chocolate. Stir until smooth and glossy.
  5. Coat the Tartufo: Once the ice cream balls are completely frozen, dip each one into the warm chocolate ganache, ensuring it’s fully covered. (You can also drizzle them with melted dark chocolate, wich will create a harder outer layer) Place back in the freezer to harden for at least 1 hour.
  6. Serve: When ready to serve, slice each tartufo in half to reveal the layers. Garnish with cocoa powder or extra cherries, if desired.

Notes

For the most authentic experience, choose a rich, full-fat vanilla ice cream. You can also experiment with other ice cream flavors like chocolate or coffee for different '1-ingredient' variations. While the core is just one ingredient, don't hesitate to add a dusting of cocoa powder or a drizzle of your favorite chocolate sauce to elevate the dish!.
