An incredibly light, airy, and low-carb bread alternative made with just eggs and cream cheese.
Ingredients
3 large eggs
3 ounces cream cheese, softened
1/8 teaspoon cream of tartar (optional stabilizer)
Instructions
Step 1: Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper or a silicone mat.
Step 2: Separate the egg whites from the yolks into two completely clean, grease-free mixing bowls.
Step 3: Add the softened cream cheese to the egg yolks and whisk until the mixture is completely smooth and creamy.
Step 4: Add the cream of tartar to the egg whites and beat with an electric mixer on high speed until stiff peaks form.
Step 5: Gently fold the yolk mixture into the egg whites using a spatula, being careful not to deflate the whites.
Step 6: Spoon the batter into 8 even mounds on the baking sheet and bake for 25-30 minutes until golden.
Step 7: Let the bread cool completely on the pan before serving to allow the structure to set.
Notes
Ensure your egg whites have no trace of yolk, or they will not whip properly. Adding herbs like rosemary or garlic powder can enhance the flavor.
