Ingredients
1 cup self-rising flour
1 cup plain non-fat Greek yogurt
2 tbsp monk fruit sweetener
1 tsp vanilla extract
1/2 tsp ground cinnamon
Non-stick cooking spray
Instructions
Step 1: Preheat your air fryer to 350°F (175°C).
Step 2: In a bowl, whisk together the flour and monk fruit sweetener.
Step 3: Fold in the Greek yogurt, vanilla, and cinnamon until a dough forms.
Step 4: Roll the dough into 20 small, even balls using floured hands.
Step 5: Place the balls in the air fryer basket, ensuring they are not touching.
Step 6: Air fry for 6-8 minutes until golden brown.
Step 7: Remove and let cool on a wire rack.
Notes
Ensure the Greek yogurt is thick. If using all-purpose flour, add 1.5 tsp baking powder and 1/2 tsp salt.
