A simple, wholesome recipe for delightful banana oat cookies made with just three ingredients and no added sugar or flour.
Ingredients
2 ripe large bananas, mashed
1 ½ cups rolled oats (certified gluten-free if needed)
½ cup unsweetened applesauce
Optional additions: ¼ cup chocolate chips, ½ tsp ground cinnamon, ¼ cup chopped nuts
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
Step 2: In a medium bowl, thoroughly mash the ripe bananas until mostly smooth. A few small lumps are fine.
Step 3: Add the rolled oats and unsweetened applesauce to the mashed bananas. Stir until all ingredients are well combined. If adding optional ingredients like cinnamon or chocolate chips, fold them in now.
Step 4: Drop spoonfuls of the mixture onto the prepared baking sheet, forming small cookie shapes. Flatten them slightly with the back of a spoon, as they won't spread much during baking.
Step 5: Bake for 12-15 minutes, or until the edges are lightly golden and the cookies are set.
Step 6: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. They will firm up as they cool.
Notes
For best results, use very ripe bananas (with brown spots) for maximum sweetness. These cookies are quite soft when warm; allow them to cool completely for a firmer texture. Get creative with additions like a pinch of cinnamon, vanilla extract, or a handful of dried fruit!
