Description
A quick and delicious weeknight meal featuring tender chicken, creamy cream cheese, crispy bacon, and melted cheddar, all baked to perfection in just 30 minutes.
Ingredients
1.5 lbs boneless, skinless chicken breasts (2-3 large)
4 oz cream cheese, softened
1 cup shredded sharp cheddar cheese, divided
6 slices bacon, cooked crispy and crumbled
1 tbsp olive oil
1/2 tsp garlic powder
1/4 tsp onion powder
Salt and black pepper to taste
2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish.
Step 2: If chicken breasts are very thick, slice them horizontally to create thinner cutlets, or pound them to an even 1/2-inch thickness. Season both sides of the chicken with salt and black pepper.
Step 3: In a small bowl, combine the softened cream cheese, 1/2 cup of the shredded cheddar cheese, garlic powder, and onion powder. Mix well until the mixture is smooth and evenly combined.
Step 4: Spread a generous layer of the cream cheese mixture evenly over one side of each chicken cutlet.
Step 5: Place the chicken, cream cheese side up, in the prepared baking dish. Sprinkle the cooked and crumbled bacon over the cream cheese, then top with the remaining 1/2 cup of shredded cheddar cheese.
Step 6: Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F / 74°C) and the cheese is bubbly and golden brown. Cooking time may vary based on chicken thickness.
Step 7: Garnish with fresh chopped parsley if desired, and serve immediately with your favorite sides.
Notes
For extra flavor, you can add a pinch of smoked paprika to the cream cheese mixture. If you prefer spicier chicken, a dash of cayenne pepper can be included. This dish is excellent for meal prep; simply store cooled leftovers in an airtight container for up to 3 days.
