Ingredients
2 cups self-rising flour
1 cup cottage cheese (full-fat or low-fat)
1/4 cup milk (any kind)
2 tablespoons melted butter (optional, for brushing tops)
Instructions
Step 1: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Step 2: In a medium bowl, combine the self-rising flour. Make a well in the center.
Step 3: Add the cottage cheese and milk to the well. Stir gently with a spoon or spatula until just combined. The dough will be shaggy and sticky – avoid overmixing.
Step 4: Using a large spoon or ice cream scoop, drop 6-8 equal portions of dough onto the prepared baking sheet, leaving some space between each biscuit. If desired, brush the tops with melted butter or a little extra milk for a golden finish.
Step 5: Bake for 12-15 minutes, or until the biscuits are puffed up and golden brown on top. The exact time may vary depending on your oven.
