An incredibly easy and quick recipe for a moist lemon bread topped with a sweet, tangy lemon glaze, perfect for any occasion.
Ingredients
1 ½ cups all-purpose flour
1 cup granulated sugar
1 ½ teaspoons baking powder
½ teaspoon salt
2 large eggs
½ cup milk
½ cup unsalted butter, melted
¼ cup fresh lemon juice
1 tablespoon lemon zest
For the Glaze:
1 ½ cups powdered sugar
3 tablespoons fresh lemon juice
2 tablespoons unsalted butter, melted
Instructions
Step 1: Preheat your oven to 350°F (175°C). Lightly grease and flour a standard loaf pan (8.5 x 4.5 inches or 9 x 5 inches).
Step 2: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Make a well in the center of the dry ingredients.
Step 3: In a separate bowl, whisk together the eggs, milk, melted butter, ¼ cup lemon juice, and lemon zest.
Step 4: Pour the wet ingredients into the well of the dry ingredients. Stir gently with a spoon or spatula just until combined. Be careful not to overmix; a few lumps are fine.
Step 5: Pour the batter evenly into the prepared loaf pan. Bake for 50-60 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean.
Step 6: While the bread is baking, prepare the glaze. In a medium bowl, whisk together the powdered sugar, 3 tablespoons fresh lemon juice, and 2 tablespoons melted butter until smooth. If the glaze is too thick, add a tiny bit more lemon juice; if too thin, add a little more powdered sugar.
Step 7: Once the bread is baked, remove it from the oven and let it cool in the pan for 5-10 minutes. While still warm, slowly pour the prepared glaze evenly over the top of the bread. The warm bread will absorb the glaze, making it incredibly moist.
Step 8: Allow the bread to cool completely in the pan before carefully removing it and slicing. Enjoy!
Notes
For an extra boost of lemon flavor, you can brush the warm bread with a simple lemon syrup (equal parts sugar and lemon juice, simmered until sugar dissolves) before adding the glaze. This bread stores beautifully at room temperature for 3-4 days in an airtight container.
