- 8 oz low-fat cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 package instant vanilla pudding mix (3.4 oz)
- 2 cups cold milk or unsweetened almond milk
- 1 tub light whipped topping (8 oz), thawed
- 2 cans sliced peaches (15 oz each), drained and chopped
- 2 tbsp granulated sugar (optional)
Instructions
- In a medium bowl, combine graham cracker crumbs and melted butter until texture resembles wet sand.
- Press mixture firmly into the bottom of a 9×13-inch dish to form crust.

- Beat softened cream cheese with powdered sugar and vanilla extract until smooth.
- Spread cream cheese mixture evenly over chilled crust.
- Whisk instant vanilla pudding mix with cold milk until thickened (about 2 minutes).
- Fold in half of the whipped topping to create mousse-like consistency.
- Spread pudding layer over cream cheese layer.

- Spread peach topping over pudding layer.
- Cover and refrigerate for at least 2 hours until set.
- Slice into squares and serve chilled.
Notes
Substitute full-fat dairy with low-fat or plant-based alternatives. Use gluten-free oat crust for a healthier option. Replace powdered sugar with honey for natural sweetness.
