Description

A classic Mexican dessert featuring crispy, golden fried ice cream with a cold, creamy center, perfect for festive occasions.

Ingredients

Scale
  • 6 scoops premium-quality vanilla ice cream
  • 1 cup all-purpose flour
  • 2 large eggs, beaten with 1 tsp vanilla extract
  • 2 cups crushed cornflakes
  • 1 tsp ground cinnamon
  • 2 tbsp granulated sugar
  • Vegetable oil for frying
  • 4 slices vanilla pound cake (optional, for serving)
  • Whipped cream (for topping)
  • Caramel sauce (for drizzling)
  • Chocolate sauce (for drizzling)
  • Chopped pecans or peanuts (for garnish)
  • Fresh berries or mint sprigs (optional, for garnish)

Instructions

  1. Let vanilla ice cream soften at room temperature for 5 minutes.
  2. Scoop six uniform balls and place on parchment-lined tray.
  3. Freeze scoops for at least 2 hours until rock solid.
  4. Prepare three shallow bowls: flour, beaten eggs with vanilla, and crushed cornflakes mixed with cinnamon and sugar.
  5. Press each frozen scoop into flour, then egg wash, then coat thoroughly with cornflake mixture.
  6. Return coated scoops to freezer immediately.
  7. Heat vegetable oil in a deep pot to 350 °F (175 °C).
  8. Fry two scoops at a time for 10–12 seconds until golden and crispy.
  9. Drain excess oil on fresh parchment paper and return to freezer briefly.
  10. For serving, arrange pound cake slices on chilled platter and layer fried ice cream balls as desired.
  11. Top with whipped cream, drizzle caramel and chocolate sauces, and sprinkle chopped nuts.
  12. Garnish with fresh berries or mint sprigs if desired and serve immediately.

Notes

Ensure ice cream scoops are thoroughly frozen before frying to prevent melting. Maintain oil temperature steady at 350 °F for best results. Experiment with alternative coatings like panko or crushed nuts for texture variations.
