Description

A classic Southern quick bread featuring toasted pecans and a tender, buttery crumb.


Ingredients

2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 cup buttermilk
1 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
1.5 cups chopped pecans


Instructions

Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
Step 2: Toast chopped pecans in a dry pan over medium heat for 3-5 minutes until fragrant.
Step 3: Cream softened butter and sugar in a large bowl until light and fluffy.
Step 4: Add eggs one at a time, beating well, then add vanilla extract.
Step 5: Mix flour, baking powder, and salt in a separate container.
Step 6: Alternately add flour mixture and buttermilk to the creamed butter, beginning and ending with flour.
Step 7: Gently fold in the toasted pecans.
Step 8: Transfer batter to the loaf pan and bake for 55-60 minutes.
Step 9: Cool in the pan for 10 minutes, then move to a wire rack.

Notes

Ensure all ingredients are at room temperature for the smoothest batter. Do not over-mix after adding flour.
