8 ounces cream cheese, softened
1 cup creamy peanut butter (processed, like Jif or Skippy)
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 (8 ounce) container frozen whipped topping (like Cool Whip), thawed, divided
1 1/2 cups powdered sugar
1/2 cup milk (whole milk recommended)
Optional: Chopped peanuts or chocolate shavings for garnish


Instructions

Step 1: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Step 2: Add the creamy peanut butter, granulated sugar, and vanilla extract to the cream cheese mixture. Beat until well combined and smooth.
Step 3: Gradually add the powdered sugar and milk to the peanut butter mixture, beating until the filling is light, fluffy, and thoroughly mixed.
Step 4: Gently fold in about half of the thawed whipped topping into the peanut butter mixture until no streaks remain.
Step 5: Pour the peanut butter filling into the graham cracker crust, spreading it evenly with a spatula.
Step 6: Cover the pie loosely with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until firm.
Step 7: Before serving, spread the remaining whipped topping over the chilled pie. Garnish with chopped peanuts or chocolate shavings, if desired.
Step 8: Slice and serve immediately. Store any leftovers in the refrigerator.

Notes

For an extra rich flavor, you can use homemade whipped cream instead of store-bought whipped topping. Ensure your cream cheese is at room temperature for a smooth filling. For a chocolate crust, crush 15-20 chocolate sandwich cookies and mix with 1/4 cup melted butter, then press into a pie plate.
