Description
A moist and flavorful quick bread combining ripe bananas and tart apples, topped with a crunchy cinnamon streusel and sweet icing.
Ingredients
2 eggs
1/3 cup sour cream
1/2 cup vegetable oil
1 cup mashed ripe bananas
1 cup granulated sugar
1/2 cup brown sugar
1 tsp vanilla extract
2 cups all purpose flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1 cup peeled & diced apple
3 tbsp flour (streusel)
4 tbsp brown sugar (streusel)
1/4 tsp cinnamon (streusel)
1 tbsp melted butter (streusel)
1/2 cup powdered sugar (icing)
2 tsp hot water (icing)
Instructions
Step 1: Preheat oven to 350°F and grease a 9x5 inch loaf pan.
Step 2: In a large bowl, whisk together eggs, sour cream, oil, bananas, sugars, and vanilla.
Step 3: Stir in the flour, baking soda, cinnamon, and salt until just combined.
Step 4: Fold in the diced apples carefully.
Step 5: Pour batter into the pan and top with the mixed streusel ingredients.
Step 6: Bake for 50-60 minutes until a toothpick comes out clean.
Step 7: Once cooled slightly, drizzle with the powdered sugar and water icing.
Notes
Use very ripe bananas for the best sweetness and moisture. Granny Smith apples provide the best texture.
