Description
A rich and decadent bread pudding featuring buttery brioche, tart Granny Smith apples, and a warm bourbon-infused custard.
Ingredients
1 lb brioche bread, cut into 1-inch cubes
3 large Granny Smith apples, peeled and sliced
4 tbsp unsalted butter
1/2 cup brown sugar
1/4 cup plus 2 tbsp bourbon (divided)
4 large eggs
1 cup heavy cream
1 cup whole milk
1/2 cup granulated sugar
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp vanilla extract
1/4 tsp salt
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish. Spread the bread cubes on a baking sheet and toast for 10 minutes until slightly dry.
Step 2: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced apples and brown sugar. Cook for 5-7 minutes until softened. Stir in 2 tablespoons of bourbon and cook for 1 more minute.
Step 3: In a large mixing bowl, whisk together the eggs, heavy cream, milk, granulated sugar, remaining 2 tablespoons of butter (melted), remaining 1/4 cup bourbon, cinnamon, nutmeg, vanilla, and salt.
Step 4: Place the toasted bread cubes and the sautéed apples into the prepared baking dish, tossing gently to distribute the fruit.
Step 5: Pour the custard mixture evenly over the bread and apples. Press down lightly with a spatula to ensure all bread is submerged. Let it sit for 20 minutes to soak.
Step 6: Bake for 45-50 minutes, or until the custard is set and the top is golden brown and slightly crisp. Serve warm.
Notes
For a non-alcoholic version, replace the bourbon with apple juice and a teaspoon of rum extract.
