These moist and tender apple brown sugar muffins are packed with fresh fruit and topped with a crunchy, caramelized brown sugar streusel.
Ingredients
2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup dark brown sugar, packed
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1/2 cup whole milk
1 large egg
1 teaspoon vanilla extract
2 cups peeled and diced apples (approx. 2 medium apples)
For the Topping: 1/4 cup brown sugar, 1/4 cup flour, 2 tablespoons cold butter
Instructions
Step 1: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease with non-stick spray.
Step 2: In a large bowl, whisk together the flour, granulated sugar, dark brown sugar, baking powder, cinnamon, and salt for the apple brown sugar muffins batter.
Step 3: In a separate medium bowl, combine the melted butter, milk, egg, and vanilla extract until well blended.
Step 4: Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Fold in the diced apples carefully.
Step 5: In a small bowl, prepare the topping by mixing the brown sugar and flour, then cutting in the cold butter until the mixture resembles coarse crumbs.
