Description

Soft, chewy, and bursting with fresh apples, these bars are a perfect make-ahead breakfast or wholesome snack.


Ingredients

Scale

2 cups old-fashioned rolled oats
1 cup whole wheat flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1/3 cup maple syrup
1/4 cup melted coconut oil
1 large egg
1 teaspoon vanilla extract
2 cups diced apples (approx. 2 medium apples)


Instructions

Step 1: Preheat your oven to 350°F (175°C) and line an 8x8 inch square baking pan with parchment paper.
Step 2: In a large bowl, whisk together the oats, flour, cinnamon, baking soda, and salt until well combined.
Step 3: In a medium bowl, whisk the maple syrup, melted coconut oil, egg, and vanilla extract until the mixture is uniform.
Step 4: Pour the wet ingredients into the dry ingredients and stir with a spatula until all the oats are thoroughly moistened.
Step 5: Gently fold in the diced apples until they are evenly distributed throughout the thick batter.
Step 6: Transfer the mixture to the prepared pan and press it down firmly and evenly into the corners.
Step 7: Bake for 30 to 35 minutes, or until the top is set and the edges are starting to turn a beautiful golden brown.
Step 8: Allow the bars to cool completely in the pan before lifting them out by the parchment paper and slicing into 12 rectangles.

Notes

Store in an airtight container for up to 5 days or freeze for up to 3 months. Use tart apples for the best flavor contrast.
