Description
A decadent, moist apple and cinnamon streusel coffee cake with a thick layer of tart apples and a crunchy cinnamon-spiced topping.
Ingredients
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 cup sour cream
2 cups peeled and chopped Granny Smith apples
1/2 cup brown sugar (for streusel)
1/2 cup flour (for streusel)
1 tsp ground cinnamon (for streusel)
1/4 cup cold butter, cubed (for streusel)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x9 inch square baking pan to prepare for the apple and cinnamon streusel coffee cake batter.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt for the base of the apple and cinnamon streusel coffee cake.
Step 3: In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, usually about 3 minutes.
Step 4: Add the eggs one at a time to the butter mixture, beating well after each addition, then stir in the vanilla extract.

Notes
