Ingredients
1/2 cup unsalted butter, softened
1/2 cup packed light brown sugar
1/2 cup unsulphured molasses
1 large egg, room temperature
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground cloves
2 cups tart apples, peeled and finely diced (approx. 2 medium apples)
Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper for easy removal.
Step 2: In a medium bowl, whisk together the flour, baking soda, salt, ground ginger, cinnamon, and cloves until well combined.
Step 3: In a large mixing bowl, cream together the softened butter and brown sugar until the mixture is light and fluffy.
Step 4: Beat in the egg and molasses until the mixture is smooth and well incorporated.
Step 5: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
Step 6: Gently fold in the finely diced apples with a spatula until they are evenly distributed through the thick batter.
Step 7: Spread the batter into the prepared baking pan, smoothing the top with a spatula.
Step 8: Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Step 9: Remove from the oven and allow to cool completely in the pan on a wire rack before cutting into 16 squares.
Notes
Ensure your apples are diced small so they distribute evenly. For an extra kick, add 1/2 cup of crystalized ginger to the batter.
