Asparagus Tomato Salad with Creamy Burrata

Description

A vibrant and refreshing salad featuring tender roasted asparagus and sweet cherry tomatoes, elegantly topped with luscious burrata cheese and drizzled with a homemade balsamic glaze.

1 bunch (about 1 lb) asparagus, tough ends trimmed
1 pint (about 2 cups) cherry or grape tomatoes
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup balsamic vinegar
8 oz (2 balls) fresh burrata cheese
1/4 cup fresh basil leaves, torn or thinly sliced


Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Step 2: On the prepared baking sheet, combine the trimmed asparagus and cherry tomatoes. Drizzle with 2 tablespoons of olive oil, sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Toss gently to coat evenly.
Step 3: Roast the vegetables for 12-15 minutes, or until the asparagus is tender-crisp and the tomatoes have started to burst and caramelize slightly. Remove from the oven and set aside to cool slightly.
Step 4: While the vegetables are roasting, prepare the balsamic glaze. Pour 1/2 cup of balsamic vinegar into a small saucepan. Bring to a simmer over medium heat and reduce for 5-7 minutes, or until the vinegar has thickened to a syrupy consistency that coats the back of a spoon. Be careful not to let it burn.
Step 5: Arrange the roasted asparagus and tomatoes on a serving platter. Gently place the burrata cheese balls on top of the vegetables.
Step 6: Drizzle the warm balsamic glaze generously over the salad and burrata. Garnish with fresh basil leaves before serving immediately. Enjoy this fresh and flavorful dish!

Notes

For the best flavor, use fresh, in-season asparagus and ripe cherry tomatoes. If you prefer a stronger garlic flavor, you can toss the vegetables with a minced garlic clove before roasting. Serve this salad slightly warm for the optimal burrata creaminess.
