2 ciabatta rolls, split horizontally
1 large ripe avocado
4 slices cooked bacon, crispy
2 large eggs
Salt to taste
Freshly ground black pepper to taste
Hot sauce, to drizzle (optional)


Instructions

Step 1: Toast the Ciabatta Rolls: Slice the ciabatta rolls in half. In a dry skillet over medium heat, toast the cut sides until golden brown and crispy, about 2-3 minutes.
Step 2: Cook the Bacon: If not pre-cooked, bake the bacon in a preheated 425°F (220°C) oven until crispy, or cook in a skillet on the stovetop. Drain on paper towels.
Step 3: Prepare the Avocado: Slice the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash it with a fork until desired consistency, then season with salt and freshly ground black pepper to taste.
Step 4: Cook the Eggs: In a lightly oiled skillet, fry the eggs to your preferred level of doneness (sunny side up, over-easy, or scrambled).
Step 5: Assemble the Toast: Spread a generous layer of the mashed avocado onto each toasted ciabatta roll half.
Step 6: Add the Bacon: Place two slices of crispy bacon on top of the avocado on each ciabatta half.
Step 7: Top with the Egg: Carefully place one fried egg on top of the bacon and avocado layer on each roll.
Step 8: Finish and Serve: Drizzle with hot sauce if desired, and serve immediately while warm. Enjoy your delicious avocado toast!

Notes

For an extra flavor boost, add a pinch of garlic powder or red pepper flakes to the mashed avocado. A squeeze of fresh lime juice can also brighten the flavors.
