Description
These refreshing Bacon Cheddar Cucumber Bites combine crisp cucumber with a creamy, savory topping of bacon and sharp cheddar, perfect for a quick snack or appetizer.
Ingredients
6 slices thick-cut bacon
2 large English cucumbers
4 oz cream cheese, softened
1/2 cup shredded sharp cheddar cheese
1/4 teaspoon garlic powder (optional)
Fresh chives or parsley, chopped (for garnish, optional)
Instructions
Step 1: Cook the bacon. In a skillet over medium heat, cook bacon until crispy. Remove from skillet, drain on paper towels, and once cooled, chop into small pieces. Set aside.
Step 2: Prepare the cucumbers. Wash and slice cucumbers into 1/4-inch thick rounds. Lay them on paper towels and gently pat dry to remove excess moisture. This is crucial for preventing soggy bites.
Step 3: Make the cheese mixture. In a medium bowl, combine the softened cream cheese, shredded sharp cheddar cheese, and half of the chopped crispy bacon. If using, add garlic powder. Mix until well combined and creamy.
Step 4: Assemble the bites. Spoon or pipe (using a small zip-top bag with the corner snipped off) the cream cheese mixture onto each cucumber slice.
Step 5: Garnish and serve. Sprinkle the remaining chopped crispy bacon over the top of each bite. Garnish with fresh chives or parsley if desired. Serve immediately or chill for 15-20 minutes for flavors to meld.
Notes
For extra zest, add a tiny squeeze of lemon juice or a pinch of onion powder to the cream cheese mixture. Ensure all ingredients are at room temperature for easier mixing.
