Description

These delightful Bacon, Egg & Cheese Sliders combine creamy mashed hard-boiled eggs with fresh avocado, crispy bacon, and melted cheddar cheese, all nestled in soft, buttery slider buns for an ultimate breakfast or brunch treat.


Ingredients

12 Hawaiian sweet rolls or slider buns
8 large hard-boiled eggs, peeled and mashed
1 ripe avocado, mashed
6 slices cooked bacon, crispy and crumbled
1 cup shredded cheddar cheese
1/4 cup mayonnaise
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon black pepper
Optional: Fresh chives, chopped, for garnish


Instructions

Step 1: Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
Step 2: In a medium bowl, combine the mashed hard-boiled eggs, mashed avocado, mayonnaise, Dijon mustard, salt, and black pepper. Mix until well combined.
Step 3: Carefully slice the Hawaiian rolls horizontally, keeping the bottoms attached if possible, or separating them and arranging the bottom halves in the prepared baking dish.
Step 4: Spread the egg and avocado mixture evenly over the bottom halves of the rolls.
Step 5: Sprinkle the crumbled crispy bacon over the egg mixture.
Step 6: Top with the shredded cheddar cheese.
Step 7: Place the top halves of the rolls back over the cheese layer.
Step 8: Cover the baking dish loosely with aluminum foil. Bake for 15-20 minutes, or until the cheese is melted and bubbly and the sliders are warmed through.
Step 9: Remove the foil for the last 5 minutes of baking if you prefer the tops to be slightly golden.
Step 10: Carefully remove from the oven, slice into individual sliders, and serve warm. Garnish with fresh chives, if desired.

Notes

For an extra kick, add a dash of hot sauce or a pinch of red pepper flakes to the egg mixture. These sliders are also fantastic with other cheeses like Monterey Jack or provolone.
