Ingredients
1 cup cottage cheese (full-fat recommended)
1 large apple, cored and thinly sliced (Granny Smith or Honeycrisp)
1 tablespoon maple syrup (or honey, adjust to taste)
1/2 teaspoon ground cinnamon
1/4 teaspoon vanilla extract (optional)
Pinch of nutmeg (optional)

Instructions
Step 1: Preheat your oven to 375°F (190°C). Lightly grease two small oven-safe ramekins or a small baking dish.
Step 2: In a medium bowl, combine the thinly sliced apple with maple syrup, ground cinnamon, vanilla extract (if using), and a pinch of nutmeg (if using). Toss gently to coat the apples evenly.
Step 3: Divide the cottage cheese equally between the two prepared ramekins or spread it as a base in the baking dish.
Step 4: Arrange the seasoned apple slices over the cottage cheese in each ramekin or baking dish.
Step 5: Bake for 18-22 minutes, or until the apples are tender and slightly caramelized, and the cottage cheese is warm and lightly golden around the edges.
Step 6: Carefully remove from the oven. Let cool for a few minutes before serving. Garnish with your favorite toppings like chopped nuts or granola, and an extra drizzle of maple syrup, if desired.
Notes
For an even richer flavor, you can briefly sauté the apples in a teaspoon of butter before mixing with the spices. This can also help soften them slightly before baking. Adjust the sweetness based on your apple choice and personal preference.
