A luxurious and warm appetizer featuring creamy burrata cheese nestled in a bed of garlic-roasted cherry tomatoes. Perfect for entertaining or a cozy night in.
Ingredients
8 oz (1 ball) fresh burrata cheese
2 cups cherry tomatoes, mixed colors
3 tablespoons extra virgin olive oil
3 cloves garlic, minced
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/4 cup fresh basil leaves, torn
Balsamic glaze (optional garnish)
Crusty baguette or crostini for serving
Instructions
Step 1: Preheat your oven to 400°F (200°C). Select a medium-sized oven-safe skillet or a ceramic baking dish.
Step 2: Add the cherry tomatoes, minced garlic, olive oil, salt, and pepper to the dish. Toss well until the tomatoes are evenly coated.
Step 3: Place the dish in the oven and roast for 18-20 minutes, or until the tomatoes are soft, blistering, and have released some of their juices.
Step 4: Remove the dish from the oven and use a spoon to create a small well in the center of the roasted tomatoes.
Step 5: Gently place the burrata ball into the center of the tomatoes. Return the dish to the oven for 3-5 minutes just to warm the cheese through.
Step 6: Remove from the oven, garnish with fresh basil and an optional drizzle of balsamic glaze. Serve immediately with warm bread.
Notes
Ensure the burrata is at room temperature before placing it in the oven for the most even warming.
