Description
Crispy dill pickles enveloped in a creamy, savory cheese filling, all wrapped in a flaky pastry and baked to golden perfection.
Ingredients
12–16 large dill pickle spears (or whole gherkins if you want smaller bombs), drained & patted dry
8 oz (225 g) cream cheese, softened
1 cup (100 g) shredded sharp cheddar (plus extra for topping if desired)
2–3 tbsp mayonnaise (optional — makes filling silkier)
1 tsp garlic powder
1 tsp onion powder
¼–½ tsp smoked paprika (optional)
Salt & pepper to taste (be light — pickles are salty)
1 can refrigerated biscuit dough (butter biscuits) or 1 package crescent roll dough or puff pastry — enough to wrap 12–16 pieces
1 egg
1 tbsp water
Instructions
Step 1: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Step 2: In a medium bowl, combine the softened cream cheese, shredded sharp cheddar, mayonnaise (if using), garlic powder, onion powder, and smoked paprika (if using). Mix until well combined and smooth. Season lightly with salt and pepper, remembering the pickles are already salty.
Step 3: Pat the dill pickle spears very dry with paper towels. This is crucial for preventing soggy bites!
Step 4: If using biscuit dough, flatten each biscuit. If using crescent roll dough, separate into triangles. If using puff pastry, roll it out and cut into rectangles or squares suitable for wrapping.
Step 5: Spread a generous amount of the cheesy mixture onto one side of each dried pickle spear.
Step 6: Place a pickle spear (cheese-side up) onto a flattened biscuit or crescent roll triangle. Carefully wrap the dough around the pickle, pinching the seams to seal completely. Ensure no cheese mixture is exposed.
Step 7: In a small bowl, whisk together the egg and water to create an egg wash. Brush the tops of each wrapped pickle bite with the egg wash for a golden, shiny crust. If desired, sprinkle with a little extra shredded cheddar.
Step 8: Arrange the wrapped pickle bites seam-side down on the prepared baking sheet.
Step 9: Bake for 20-25 minutes, or until the pastry is golden brown and puffed, and the cheese is melted and bubbly.
Step 10: Let cool for a few minutes before serving. Enjoy warm!
Notes
For an extra kick, add a pinch of cayenne pepper to the cheese mixture. You can also use different types of pickles like bread and butter pickles for a sweeter version. Serve with ranch or a spicy dipping sauce!
