Description

Baked Cottage Cheese Eggs are a warm, hearty breakfast dish made with creamy cottage cheese, fluffy eggs, and your favorite vegetables. Perfectly nutritious and easy to customize, this comforting casserole is great for busy mornings or relaxed brunches.

Ingredients

Scale
  • 6 large eggs
  • 1 cup cottage cheese (small or large curd)
  • 1 cup spinach, chopped (fresh or frozen)
  • 1/2 cup bell pepper, diced
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C) and grease an 8x8-inch baking dish with cooking spray or butter.
  2. Mix the Ingredients: In a large bowl, whisk together the eggs, cottage cheese, garlic powder, onion powder, salt, and pepper until combined. Fold in chopped spinach, bell pepper, and half the shredded cheese.
  3. Bake: Pour the mixture into the prepared dish, spread evenly, and top with the remaining cheese. Bake for 30–35 minutes, or until the eggs are set and top is golden.
  4. Serve: Let it cool slightly, garnish with herbs if using, slice, and serve warm.

Notes

Try kale, mushrooms, zucchini, or broccoli for veggie variety. Add fresh herbs like dill or parsley, or spice it up with jalapeños or chili flakes. Store leftovers for up to 3 days and reheat in the oven or microwave.
