Ingredients
4 (6-ounce) cod fillets
1 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
3 tablespoons unsalted butter, melted
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon dried parsley
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Step 1: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a wire rack.
Step 2: Pat the cod fillets thoroughly dry with paper towels to ensure the breading sticks.
Step 3: In a shallow bowl, whisk together the melted butter and lemon juice.
Step 4: In a separate shallow bowl, combine panko, Parmesan, lemon zest, parsley, garlic powder, onion powder, salt, and pepper.
Step 5: Dip each cod fillet into the butter mixture, then press into the panko mixture, coating generously.
Step 6: Place fillets on the baking sheet and bake for 12-15 minutes until the internal temperature reaches 145°F.
