Ingredients
4 ripe but firm pears (e.g., Bosc or Conference), peeled & halved
2 tbsp unsalted butter, melted
2 tbsp honey + extra for drizzling
1 tsp cinnamon
½ tsp vanilla extract
Pinch of sea salt
½ cup blackberries
½ cup raspberries
â…“ cup chopped toasted walnuts
¼ cup crumbled blue cheese (or gorgonzola)
Fresh thyme or microgreens, for garnish (optional)
Instructions
Step 1: Preheat your oven to 375°F (190°C). Lightly grease a baking dish that can comfortably hold the pear halves.
Step 2: In a small bowl, whisk together the melted unsalted butter, 2 tablespoons of honey, cinnamon, vanilla extract, and sea salt until well combined.
Step 3: Arrange the pear halves cut-side up in the prepared baking dish. Brush the honey-butter mixture evenly over the cut surfaces of the pears.
Step 4: Bake for 20 minutes, or until the pears are tender when pierced with a fork but still hold their shape.
Step 5: Remove the baking dish from the oven. Carefully scatter the fresh blackberries, raspberries, chopped toasted walnuts, and crumbled blue cheese over and around the baked pear halves.
Step 6: Drizzle with extra honey, if desired, and garnish with fresh thyme or microgreens before serving warm.
Notes
For best results, use firm, ripe pears. The strength of blue cheese can vary, so taste and adjust the amount to your preference. Toasting walnuts enhances their flavor significantly.
