Ingredients

4 red snapper fillets (approx 6 oz each)
3 tablespoons extra virgin olive oil
3 cloves garlic, minced
1 large lemon, zested and sliced
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 tablespoons fresh parsley, chopped


Instructions

Step 1: Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
Step 2: Pat the red snapper fillets dry using paper towels to ensure a better texture after baking.
Step 3: Place the fillets in the prepared baking dish in a single layer.
Step 4: In a small bowl, mix the olive oil, minced garlic, lemon zest, salt, pepper, and paprika.
Step 5: Brush the garlic and herb mixture evenly over the top of each snapper fillet.
Step 6: Place thin lemon slices on top of each fillet and bake for 12-15 minutes until the fish is opaque and flakes easily.
Step 7: Remove from the oven, garnish with fresh parsley, and serve immediately.

Notes

For extra flavor, add a splash of white wine to the baking dish before putting it in the oven.
