Ingredients
3 large overripe bananas, mashed
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 1/2 cups all-purpose flour
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper.
Step 2: In a large mixing bowl, mash the ripe bananas with a fork or masher until smooth but slightly chunky.
Step 3: Stir the melted butter into the mashed bananas until well combined.
Step 4: Mix in the granulated sugar, beaten egg, and vanilla extract.
Step 5: Sprinkle the baking soda and salt over the mixture and stir in.
Step 6: Gently fold in the all-purpose flour using a spatula until just combined; do not overmix.
Step 7: Pour the batter into your prepared loaf pan and bake for 50 to 60 minutes, or until a tester comes out clean.
Step 8: Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For the best flavor, use bananas that have plenty of brown spots. You can add walnuts or chocolate chips if desired.
