Description
A delicious mashup of creamy banana pudding and classic marshmallow cereal treats, loaded with vanilla wafers.
Ingredients
6 cups puffed rice cereal
10 oz mini marshmallows
5 tbsp unsalted butter
1 box (3.4 oz) instant banana cream pudding mix
1.5 cups vanilla wafers, chopped
1 tsp vanilla extract
Pinch of salt
Instructions
Step 1: Line a 9x9 inch square pan with parchment paper and grease lightly.
Step 2: Melt the butter in a large pot over low heat until liquid.
Step 3: Add the mini marshmallows and stir until they are mostly melted and smooth.
Step 4: Whisk in the dry instant banana pudding mix, vanilla, and salt until fully incorporated.
Step 5: Remove from heat and gently fold in the rice cereal and chopped vanilla wafers.
Step 6: Transfer to the pan and press gently with a greased spatula to flatten.
Step 7: Cool at room temperature for 1 hour before slicing into squares.
Notes
Always use fresh marshmallows for the softest texture. Do not use the stove on high heat or the sugar will harden.
