Ingredients
1.5 lbs Boneless, Skinless Chicken Thighs, cubed
2 Large Sweet Potatoes, diced into 1/2-inch cubes
1/2 cup BBQ Sauce
1 Red Bell Pepper, diced
1/2 Red Onion, chopped
2 cloves Garlic, minced
2 tbsp Olive Oil
1 tsp Smoked Paprika
Salt and Pepper to taste
Fresh Cilantro for garnish
Instructions
Step 1: Season chicken with smoked paprika, salt, and pepper.
Step 2: Sear chicken in a large skillet with 1 tbsp olive oil over medium-high heat until browned; remove and set aside.
Step 3: Add remaining oil and sweet potatoes to the skillet; cook for 12 minutes until tender.
Step 4: Add onion and bell pepper; sauté for 5 minutes.
Step 5: Stir in garlic and cook for 1 minute.
Step 6: Return chicken to skillet and stir in BBQ sauce.
Step 7: Simmer for 3 minutes and garnish with cilantro.
Notes
Ensure sweet potatoes are cut small for faster cooking. Use a cast iron skillet for the best caramelization.
