Ingredients
4 oz non-fat cream cheese, softened
1 tbsp pure honey
1/2 tsp lemon zest
3 tbsp fresh basil, finely chopped (plus 1 tbsp for garnish)
1 tbsp olive oil
2 slices whole-wheat rustic French bread
1/2 cup fresh raspberries
1/2 cup fresh blackberries
Instructions
Step 1: In a mixing bowl, combine the non-fat cream cheese, pure honey, lemon zest, and 3 tablespoons of finely chopped fresh basil. Using an electric mixer, whip the mixture on high speed until it becomes light, airy, and fluffy.
Step 2: Heat the olive oil in a non-stick skillet over medium heat. Once shimmering, place each slice of rustic French bread into the pan and toast both sides until they turn golden brown and delightfully crisp.
Step 3: Once toasted, generously spread each slice of bread with approximately 1 tablespoon of the freshly whipped cream cheese mixture.
Step 4: Gently arrange fresh raspberries and blackberries evenly over the cream cheese spread on each slice of toast.
