Description

A luxurious and easy pasta dish featuring roasted cherry tomatoes, garlic, and fresh burrata cheese. This is the best creamy burrata pasta recipe for any occasion.


Ingredients

Scale

8 oz spaghetti or linguine
2 balls of fresh burrata cheese (approx 4oz each)
2 cups cherry tomatoes
4 cloves garlic, thinly sliced
1/4 cup extra virgin olive oil
1/2 tsp red pepper flakes
1/2 cup fresh basil leaves, torn
Salt and black pepper to taste
1/2 cup reserved pasta water


Instructions

Step 1: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
Step 2: While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and red pepper flakes, sautéing for 1-2 minutes until the garlic is golden.
Step 3: Add the cherry tomatoes to the skillet and season with salt and pepper. Cook for 8-10 minutes, stirring occasionally, until the tomatoes begin to burst and release their juices.
Step 4: Reserve 1/2 cup of the starchy pasta water, then drain the pasta.
Step 5: Add the pasta and the reserved water to the skillet with the tomatoes. Toss everything together for 1-2 minutes until the sauce coats the noodles.
Step 6: Remove from heat and stir in the fresh basil.
Step 7: Plate the pasta and top each serving with half a ball of burrata cheese. Serve immediately, allowing the cheese to melt into the pasta.

Notes

Always use fresh burrata for the best results. If you can't find burrata, fresh buffalo mozzarella is a decent substitute.
