Description

This easy, one-pot ground beef stovetop chili is packed with savory flavor and perfect for a comforting weeknight meal or feeding a crowd.


Ingredients

1 tablespoon olive oil
1.5 pounds ground beef (80/20 recommended)
1 large onion, diced
2 bell peppers (any color), diced
3 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional, for heat)
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can diced tomatoes, undrained
1 (6 ounce) can tomato paste
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
2 cups beef broth
1 teaspoon salt, or to taste
1/2 teaspoon black pepper, or to taste


Instructions

Step 1: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess grease.
Step 2: Add diced onion and bell peppers to the pot. Cook until softened, about 5-7 minutes.
Step 3: Stir in minced garlic, chili powder, cumin, oregano, smoked paprika, and cayenne pepper (if using). Cook for 1 minute more, stirring constantly, until fragrant.
Step 4: Pour in crushed tomatoes, diced tomatoes (undrained), and tomato paste. Stir well to combine.
Step 5: Add rinsed and drained kidney beans and black beans to the pot. Stir in beef broth, salt, and black pepper.
Step 6: Bring the chili to a simmer, then reduce heat to low, cover, and let it simmer for at least 30-45 minutes, stirring occasionally, to allow the flavors to meld. For a deeper flavor, simmer longer if desired.
Step 7: Taste and adjust seasonings as needed. Serve hot with your favorite toppings.

Notes

For a thicker chili, simmer uncovered for the last 15-20 minutes. Leftovers store wonderfully in the fridge for up to 3-4 days, and the flavors often improve overnight. This chili also freezes well for up to 3 months.
