A foolproof recipe for incredibly moist banana muffins packed with toasted walnuts and warm spices.
Ingredients
3 ripe bananas
2 large eggs
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp ground cinnamon
3/4 cup granulated sugar
1/4 tsp ground nutmeg
1/2 tsp salt
1 tsp vanilla extract
1/2 cup walnuts or pecans, chopped
1/2 cup unsalted butter, melted
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
Step 2: Mash the bananas in a large bowl until smooth.
Step 3: Stir in the melted butter, granulated sugar, eggs, and vanilla extract.
Step 4: In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
Step 5: Gently fold the dry ingredients into the wet ingredients until just combined.
Step 6: Fold in the chopped walnuts.
Step 7: Scoop the batter into the muffin cups, filling each about 3/4 full.
Step 8: Bake for 20-25 minutes or until a toothpick comes out clean.
Step 9: Cool in the pan for 5 minutes before moving to a wire rack.
Notes
Use very ripe bananas for the best flavor. Toast the nuts beforehand to enhance the texture and aroma.
