Description

A stunning and simple blackberry galette easy rustic beautiful featuring a flaky homemade crust and juicy summer berries.


Ingredients

Scale

1.5 cups all-purpose flour
1 tablespoon granulated sugar (for crust)
1/2 teaspoon salt
1/2 cup cold unsalted butter, cubed
1/4 cup ice water
3 cups fresh blackberries
1/3 cup granulated sugar (for filling)
1 tablespoon cornstarch
1 teaspoon lemon zest
1 tablespoon lemon juice
1 egg (for egg wash)
1 tablespoon turbinado sugar (for garnish)


Instructions

Step 1: In a large bowl, whisk together the flour, 1 tablespoon of sugar, and salt. Add the cold cubed butter and use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs with some pea-sized pieces remaining.
Step 2: Gradually add ice water, one tablespoon at a time, mixing until the dough just starts to come together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
Step 3: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Step 4: In a medium bowl, gently toss the blackberries with 1/3 cup sugar, cornstarch, lemon zest, and lemon juice until evenly coated.
Step 5: On a lightly floured surface, roll the chilled dough into a 12-inch circle. Transfer the dough to the prepared baking sheet.
Step 6: Arrange the blackberry mixture in the center of the dough, leaving a 2-inch border around the edges.
Step 7: Fold the edges of the dough over the blackberries, pleating the dough as you go to create a rustic border.
Step 8: Brush the edges of the crust with a beaten egg and sprinkle with turbinado sugar. Bake for 30-35 minutes, or until the crust is golden brown and the berry juices are bubbling.
Step 9: Let the galette cool for at least 15 minutes before slicing and serving.

Notes

Always use very cold butter for the flakiest crust. If the dough gets too warm while rolling, put it back in the fridge for 10 minutes.
