Description

A stunning and moist pound cake featuring a vibrant blue velvet marble effect, topped with a tangy cream cheese glaze and crunchy blue crumble.


Ingredients

3 cups cake flour
5 large eggs
2 1/2 cups granulated sugar
3 sticks salted butter
2 tsp vanilla extract
1 cup buttermilk
1 tbsp cocoa powder
1 tsp white vinegar
1/2 tsp blue gel food coloring
4 oz cream cheese
1 1/2 cups powdered sugar
2 tbsp heavy cream
1/2 cup all-purpose flour
1/4 cup sugar
3 tbsp cold butter


Instructions

Step 1: Preheat oven to 325°F and grease a 12-cup Bundt pan thoroughly.
Step 2: Cream 3 sticks of butter and 2.5 cups of sugar until light and fluffy (about 5 minutes).
Step 3: Add 5 eggs one at a time, followed by 2 tsp vanilla extract.
Step 4: Gradually mix in 3 cups of cake flour and 1 cup of buttermilk until just combined.
Step 5: Divide batter and mix cocoa, vinegar, and blue coloring into 1/3 of the mixture.
Step 6: Layer batters into the pan and swirl with a knife; bake for 80 minutes.
Step 7: Mix crumble ingredients and bake at 350°F for 10 minutes until crisp.
Step 8: Glaze the cooled cake with cream cheese mixture and top with crumble.

Ensure all dairy and eggs are at room temperature to prevent the batter from curdling.
