Description

A high-protein, delicious breakfast bake featuring creamy cottage cheese, juicy blueberries, and crunchy almonds, perfect for a healthy start to your day.


Ingredients

2 cups full-fat cottage cheese
4 large eggs
1/4 cup maple syrup (or honey)
1 teaspoon vanilla extract
1/2 teaspoon almond extract (optional, but recommended)
1/4 cup all-purpose flour (or almond flour for gluten-free)
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups fresh or frozen blueberries
1/2 cup sliced almonds, divided
1 tablespoon butter, for greasing


Instructions

Step 1: Preheat your oven to 350°F (175°C). Grease a 9x9 inch (23x23 cm) baking dish with butter.
Step 2: In a large bowl, whisk together the cottage cheese, eggs, maple syrup, vanilla extract, and almond extract until well combined and relatively smooth.
Step 3: In a separate small bowl, whisk together the flour, baking powder, and salt.
Step 4: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Step 5: Gently fold in 1 cup of blueberries and 1/4 cup of the sliced almonds into the batter.
Step 6: Pour the batter into the prepared baking dish and spread evenly. Sprinkle the remaining 1/2 cup of blueberries and 1/4 cup of sliced almonds over the top.
Step 7: Bake for 35-40 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out mostly clean.
Step 8: Let the breakfast bake cool for 10-15 minutes before slicing and serving. This helps it set properly.

Notes

For an extra touch, serve with a dollop of Greek yogurt, a sprinkle of powdered sugar, or a drizzle of extra maple syrup. If using frozen blueberries, do not thaw them first; simply add them directly to the batter.
