Ingredients
2 small flour tortillas
4 oz cream cheese, softened
2 tablespoons granulated sugar
1/2 cup fresh blueberries (or thawed frozen)
1 tablespoon butter
Instructions
Step 1: In a small bowl, combine the softened cream cheese and granulated sugar. Mix until smooth and well combined.
Step 2: Spread an even layer of the cream cheese mixture over one half of each flour tortilla.
Step 3: Distribute the fresh or thawed blueberries evenly over the cream cheese on both tortillas.
Step 4: Fold the other half of each tortilla over the filling, creating a half-moon shape.
Step 5: Melt the butter in a non-stick skillet or griddle over medium-low heat.
Step 6: Place the folded quesadillas in the skillet. Cook for 3-4 minutes per side, or until golden brown and the filling is warm and slightly gooey. Gently press down with a spatula to ensure even browning.
Step 7: Remove from heat, slice into wedges, and serve immediately with your favorite toppings like maple syrup or powdered sugar.
