Description

These delightful Blueberry Cake Donuts feature a moist, tender crumb bursting with juicy blueberries. Perfect for breakfast, brunch, or a sweet afternoon snack, these donuts are simple to make and even easier to enjoy.

Ingredients

Scale
  • For the Donuts:
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup (1 stick) unsalted butter, melted
  • 2 large eggs
  • ½ cup buttermilk (or milk with 1 teaspoon vinegar)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries (do not thaw if frozen)
  • For the Glaze (optional):
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray or butter.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. Mix Wet Ingredients: In another bowl, whisk together melted butter, eggs, buttermilk, and vanilla extract until smooth.
  4. Combine Mixtures: Pour the wet ingredients into the dry and mix gently until just combined. Fold in blueberries carefully.
  5. Fill the Donut Pan: Spoon or pipe the batter into the donut pan, filling each cavity about ¾ full.
  6. Bake: Bake for 12–15 minutes or until golden and a toothpick inserted comes out clean.
  7. Cool and Glaze: Let donuts cool in pan for 5 minutes, then transfer to a wire rack. If using glaze, whisk powdered sugar, milk, and vanilla until smooth and drizzle over cooled donuts.

Notes

Add lemon zest for a citrusy twist. Substitute the flour with a gluten-free blend for gluten-free donuts. Try raspberries or blackberries instead of blueberries. Store at room temperature for 3 days or freeze unglazed for later. Best served with coffee or tea.
