Ingredients
1 cup butter softened/unsalted
8 oz cream cheese softened
¾ cup sugar
2 teaspoon vanilla extract
4 eggs
2 cups all-purpose flour
1 ½ teaspoon baking powder
½ teaspoon salt
2 cups fresh blueberries tossed in 1 tablespoon flour
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
Step 2: Cream the softened butter, cream cheese, and sugar until light and fluffy.
Step 3: Mix in the vanilla and eggs one at a time, beating well after each.
Step 4: In a separate bowl, whisk together the flour, baking powder, and salt.
Step 5: Gradually add dry ingredients to the wet mixture, stirring until just combined.
Step 6: Toss blueberries in 1 tablespoon of flour and gently fold them into the batter.
Step 7: Pour batter into the prepared pan and bake for 55-65 minutes until a toothpick comes out clean.
Step 8: Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
