Ingredients

- 4 large eggs, separated

- 1/2 cup fresh blueberries (or frozen, thawed)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
- In a large bowl, beat the egg whites with an electric mixer until stiff peaks form (about 3-5 minutes).
- In another bowl, mix cottage cheese, egg yolks, almond flour, baking powder, salt, and vanilla extract until well combined.
- Gently fold the beaten egg whites into the cottage cheese mixture with a spatula, being careful not to deflate them.
- Fold in the fresh blueberries until evenly distributed.
- Drop spoonfuls of the batter onto the prepared baking sheet, spacing them out evenly.
- Bake for 25-30 minutes, or until tops are golden brown and set.
