Ingredients
2 cups all-purpose flour
1/3 cup granulated sugar
1 tbsp baking powder
1 tsp salt
1 tsp ground cinnamon
3/4 cup whole milk
2 large eggs
2 tbsp unsalted butter, melted
1 tsp pure vanilla extract
2 cups fresh blueberries
Canola oil for frying
1.5 cups powdered sugar (for glaze)
2-3 tbsp milk (for glaze)
Instructions
Step 1: Whisk the flour, sugar, baking powder, salt, and cinnamon in a large mixing bowl until combined.
Step 2: In a separate bowl, mix the milk, eggs, melted butter, and vanilla extract until smooth.
Step 3: Pour the wet ingredients into the dry ingredients and stir until just combined, then fold in the blueberries.
Step 4: Heat 2 inches of oil in a heavy pot to 375°F (190°C).
Step 5: Drop 1/4 cup mounds of batter into the oil and flatten slightly with a spoon.
Step 6: Fry for 2 minutes per side until golden brown and cooked through.
Step 7: Drain on a wire rack and dip in the whisked glaze while still warm.
Notes
Ensure the oil returns to 375°F between batches for the best results. Do not overmix the batter to keep the fritters light and airy.
