Description
A 20-minute, one-pan chicken dish featuring a rich and herby Boursin cheese sauce that is perfect for busy weeknights.
Ingredients
1.5 lbs boneless skinless chicken breasts
1 wheel (5.2 oz) Garlic & Fine Herbs Boursin cheese
1/2 cup low-sodium chicken broth
2 cups fresh baby spinach
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
Fresh parsley for garnish
Instructions
Step 1: Season the chicken breasts with salt and pepper on both sides. If the breasts are very thick, pound them to a 1/2-inch thickness for even cooking.
Step 2: Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 5-7 minutes per side until golden brown and cooked through (165°F internal temperature).
Step 3: Remove the chicken from the skillet and set aside on a plate. Reduce the heat to medium.
Step 4: Pour the chicken broth into the pan, scraping the bottom with a wooden spoon to release the flavorful browned bits.
Step 5: Add the Boursin cheese to the pan. Whisk continuously until the cheese is melted and a smooth, creamy sauce forms.
Step 6: Stir in the fresh baby spinach and cook for 1 minute until just wilted. Return the chicken to the pan and spoon the sauce over the meat.
Step 7: Garnish with fresh parsley and serve immediately over your choice of pasta or vegetables.
Notes
If the sauce is too thick, add a splash more broth. For a richer flavor, use heavy cream instead of broth.
