Description
A succulent and fast one-pan chicken dish using Boursin cheese to create a rich, herb-filled sauce in under 20 minutes.
Ingredients
4 small chicken breasts (boneless, skinless)
1 package (5.2 oz) Boursin Garlic & Fine Herbs Cheese
1/2 cup chicken broth
1 tablespoon olive oil
2 cups fresh baby spinach
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Step 1: Season the chicken breasts on both sides with salt and pepper.
Step 2: Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 5-6 minutes per side until golden and cooked through (internal temperature of 165°F).
Step 3: Remove the chicken from the pan and set aside on a plate to rest.
Step 4: Reduce heat to medium. Pour chicken broth into the pan, scraping up any browned bits with a spoon.
Step 5: Add the Boursin cheese to the broth, whisking or stirring until the cheese has melted into a smooth, creamy sauce.
Step 6: Stir in the baby spinach and let it wilt in the heat of the sauce (about 1 minute).
Step 7: Return the chicken and any juices from the plate back into the skillet. Spoon the sauce over the chicken and serve immediately.
Notes
If the sauce is too thick, add an extra splash of broth. Use chicken thighs for a juicier result if preferred.
