Ingredients
4 boneless skinless chicken breasts (about 1.5 pounds)
8 ounces Boursin cheese (Garlic & Fine Herbs flavor recommended)
1 cup fresh spinach, finely chopped
1 cup cherry tomatoes, halved
1 tablespoon olive oil
Salt and black pepper to taste
Instructions
Step 1: Preheat your oven to 375°F (190°C) and prepare an oven-safe skillet.
Step 2: In a small bowl, mix together the Boursin cheese and the chopped spinach until well blended.
Step 3: Slice a horizontal pocket into each chicken breast using a sharp knife, taking care not to cut through to the other side.
Step 4: Stuff each pocket with the cheese mixture and a few cherry tomato halves, then secure the edges with toothpicks.
Step 5: Season the chicken with salt and pepper. Heat olive oil in the skillet over medium-high heat and sear the chicken for 3-4 minutes per side until golden.
Step 6: Transfer the skillet to the oven and bake for 12-15 minutes until the internal temperature reaches 165°F.
Step 7: Remove from the oven, let rest for 5 minutes, remove toothpicks, and serve.
Notes
Ensure the chicken breasts are of similar size for even cooking. You can use sun-dried tomatoes for a deeper flavor profile.
