Ingredients
1 pound boneless, skinless chicken breasts
2 cups broccoli florets
2 tablespoons olive oil
Salt to taste
Pepper to taste
1 teaspoon garlic powder
1 teaspoon paprika
1/2 cup sour cream
1/4 cup mayonnaise
3 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped (optional)
Instructions
Step 1: In a medium bowl, combine the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper. Ensure the chicken is evenly coated.
Step 2: Preheat your grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing.
Step 3: While the chicken is grilling, steam the broccoli florets in a steamer basket or microwave until tender-crisp, about 4-5 minutes. Season lightly with salt.
Step 4: In a small bowl, mix together sour cream, mayonnaise, minced garlic, lemon juice, and chopped parsley (if using). Stir until smooth and creamy.
Step 5: Once the chicken has rested, slice it into strips.
Step 6: In serving bowls, layer the sliced grilled chicken and steamed broccoli. Drizzle generously with the creamy garlic sauce.
Notes
For an extra kick, add a pinch of red pepper flakes to the chicken seasoning or a dash of hot sauce to the creamy garlic sauce.
