Ingredients
1/2 cup unsalted butter (for browning)
3 large apples (Honeycrisp or Granny Smith), peeled and sliced
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1 package refrigerated puff pastry or homemade shortcrust dough
1 egg (for egg wash)
Optional: Turbinado sugar for sprinkling
Instructions
Step 1: Brown the butter by melting it in a small saucepan over medium heat, whisking until it turns golden brown and smells nutty; remove from heat immediately.
Step 2: In a large bowl, toss the sliced apples with the brown butter, sugar, cinnamon, and vanilla extract until evenly coated.
Step 3: Roll out the pastry dough and cut into six circles to fit your tartlet pans; press the dough into the pans and dock the bottoms with a fork.
Step 4: Fill each pastry shell with the apple mixture, piling them slightly high as they will shrink during baking.
Step 5: Brush the edges of the pastry with egg wash, sprinkle with turbinado sugar, and bake at 400°F (200°C) for 20-25 minutes until the crust is golden and the apples are tender.
Notes
Ensure the brown butter has cooled slightly before mixing with apples to prevent them from releasing too much juice immediately.
