Ingredients
1/2 cup creamy peanut butter
2 tablespoons unsalted butter, softened
3/4 cup powdered sugar
1/2 cup vegetable oil
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
Instructions
Step 1: Preheat your oven to 350°F (175°C) and prepare a mini muffin tin with non-stick spray or liners.
Step 2: In a small bowl, mix the peanut butter, softened butter, and powdered sugar until a smooth dough forms; roll into 24 small balls.
Step 3: In a larger bowl, whisk the vegetable oil, granulated sugar, eggs, and vanilla until smooth and well integrated.
Step 4: Add the cocoa powder, flour, salt, and baking powder to the wet ingredients and stir until just combined.
Step 5: Distribute the brownie batter evenly among the 24 muffin cups.
Step 6: Place one peanut butter ball into the center of each cup, pressing down slightly.
Step 7: Bake for 12-15 minutes until the brownie edges are set, then cool completely before serving.
