- 1 lb ground chicken
- ½ cup buffalo sauce
- 1 tablespoon ranch seasoning
- 1 cup shredded cheddar or mozzarella cheese
- 8 small flour tortillas
- 1 tablespoon oil or butter for cooking
- Optional toppings: ranch dressing, shredded lettuce, pickles, chopped onions, crumbled blue cheese, jalapeños
Instructions
- In a bowl, combine ground chicken, buffalo sauce, and ranch seasoning; mix gently until combined.
- Heat a griddle or large skillet over medium-high heat and add oil or butter.
- Place a small ball of chicken mixture onto a tortilla and press down to form a thin patty.
- Cook meat-side down for 3–4 minutes until browned and cooked through.
- Flip and toast the tortilla side for 1–2 minutes until golden and crisp.
- Flip back meat-side up, sprinkle cheese on top, and cover briefly to melt cheese.
- Remove from skillet and assemble tacos with desired toppings.
- Serve immediately while hot and crispy.
Notes
Pressing the patty thin ensures even cooking and crispy tortillas. Adjust buffalo sauce amount to control spice level. Use dairy-free cheese and ranch for a dairy-free version. Store components separately for best leftover texture.
